Improve model card, add license and pipeline tag

This PR replaces the default boilerplate model card with a documented model card for LOTUS. It links the model to the paper Bridging the Gap Between Latent and Explicit Reasoning with Looped Transformers and its official GitHub repository. It also populates the missing pipeline_tag (text-generation) and license (mit) metadata in the YAML section.
