Add pipeline tag and remove arxiv ID from metadata

This PR updates the YAML metadata of the model card:
- Adds
pipeline_tag: video-text-to-textso the repository appears under the correct task filter on the Hub. - Removes the
arxiv:2610.19849tag from the metadata, since arXiv IDs should only be referenced in the markdown content section, not in YAML.
The markdown content is already well-structured and matches the original README, so no other changes are made.
