Improve model card and add metadata

Hi! I'm Niels from the Hugging Face community science team. I've opened this PR to improve the model card for FlexiCT.

This PR adds:

The pipeline_tag: image-feature-extraction to the metadata.
Links to the paper, project page, and GitHub repository.
A sample usage section to demonstrate how to instantiate the model based on the GitHub README.

These changes will help users discover and use the FlexiCT model family more effectively.
