Add pipeline tag and citation to model card

Hi! I'm Niels from the Hugging Face team.
This PR improves the model card for PixelEyes by:
- Adding the
image-text-to-textpipeline tag to the YAML metadata to make the model discoverable on the Hub. - Adding the BibTeX citation for the paper.
