How can I test a model performance on my computer?

Hello, how can I test myself a model performance on my computer (a mistral model on a i9 with 128 gb ram and rtx 4090 ) ? I try using the default setings of the tests BUT for some it say there are not recommended ... so I guess it may be added some config somewhere . Please help with some guidelines if you can. Thanks !
