upgrade to recent gradio

the problem is that gradio uses pydantic v2 now adn haystack v1 uses pydantic v1.
I'm currently migrating the space to haystack v2 🤗 but it comes with too many changes (one of them is dropping FAISS as it's not supported with haystack v2😅).
